| 2 teaspoons rice vinegar
1 barbecued chicken, shredded (see note)
3 green onions, cut into 5cm lengths
1 Lebanese cucumber, thinly sliced
1 quantity Basic crepes (see related recipe)
1 tablespoon finely chopped fresh chives
1/4 cup hoisin sauce |

Preperation & Cooking |
Make Basic crepes (see related recipe), adding chives in step 1
Combine hoisin sauce and vinegar in a bowl. Spread 1 teaspoon sauce mixture over 1 crepe. Top with chicken, onion and cucumber. Roll up to enclose filling. Cut in half. Repeat with remaining crepes, sauce mixture, chicken, onion and cucumber. Serve.
